French chef Jean-Georges Vongerichten already had two restaurants in ABC Carpet & Home, and yesterday, he just opened another one called abcV. Rather than just offering delicious food, however, this one will only serve GMO-free and sustainable food.
Paulette Cole, co-owner of abcV and CEO and creative director of ABC Carpet & Home told Vogue, “On my own journey, I’m a bit of an “on again/off again” . . . that goes for gluten, dairy, and poultry. My quest to bring higher-vibration, medicinally informed, delicious foods into the abcV incarnation is a dream come true.”
Whether you’re on again or off again with GMOs, abcV has a healthy, mouth-watering menu of options. Cole says the must-haves are “Stems, stems, and more stems. The dosa with avocado, micro greens, and yogurt. Meyer lemon and curry leaf bouillon pea shoot with beech mushroom ramen with the gluten-free option. And artichoke, both the one on the lunch menu and the new one coming for dinner.”
The undeniable takeaway? Eat your stems, kids. [Vogue]
